Whole Wheat Carrot Cake

Carrot Cake pairs beautifully with tea and this one in particular packs in some healthier substitutes to the usual refined flour (Maida) and butter. I stopped looking around for carrot cake recipes ever since I came across this one. I don't remember the original recipe any more but over the years I've made several adjustments to the ratio of flour, sugar, oil and eggs to get to a final product that delivers the best of all worlds.
